Thịt ngan trộn mè sả với thịt ngan sơ chế bóp với muối, rượu, đem luộc cùng sả đập dập, hoa hồi cho sạch mùi hôi. Sau đó cắt lấy phần thịt, thái lát, trộn cùng sả băm, mè trắng, nước mắm pha chế. Khi ăn có thể dùng cuốn bánh tráng rất ngon.

Ngan bóp với muối và rượu rồi rửa lại cho hết mùi hôi. Cho ngan vào luộc cùng vài nhánh sả đập dập, vài nhánh hoa hồi. Thịt ngan chín, vớt ra để ráo nước. Lọc phần thịt để riêng rồi thái miếng mỏng. Trộn thịt ngan cùng sả, mè, 1 muỗng cà phê bột canh, 1 muỗng cà phê đường, 1/2 muỗng cà phê bột ngọt.

Băm nhỏ 2 củ sả. Mè đem rang chín vàng thơm.

Trước khi ăn 15 phút rưới nước cốt chanh vào thịt, trộn đều rồi cho ra đĩa thưởng thức. Chấm dùng nước mắm mặn hay nước tương đều được.
