Món chân giò hầm nước tương không chỉ ngon miệng bổ dưỡng mà còn thơm lựng mùi vỏ quế, cam thảo, hoa hồi. Thịt chân giò sau khi hầm được ăn cùng rau xanh tươi mát trung hòa các tính nóng món ăn mang đến cho bạn bữa ăn đầy dinh dưỡng, thơm ngon và hấp dẫn không thể chối từ.
Gừng rửa sạch, cắt lát. Rửa sạch chân giò, cạo hết lông. Nấu giò với nước sôi già cùng gừng lát để khử mùi hôi và bọt bẩn. Sau đó vớt ra rửa sạch lại với nước.
Chuẩn bị 2gr hoa hồi, 2gr cam thảo và 2gr hạt tiêu vào túi giấy lọc. Nếu không có túi giấy lọc, bạn có thể dùng miếng vải nhỏ rồi buộc túm lại.
4 tép tỏi đập dập. Ướp thịt chân giò với 10gr đường, 150ml nước tương, 5gr bột quế, 4 tép tỏi đập dập trong 30 phút. Sau đó cho thêm 10gr táo tàu, 3gr câu kỉ tử vào.
Hầm thịt chân giò cùng túi lọc gia vị đã chuẩn bị với 2l nước sạch trong 3 tiếng đồng hồ trên lửa nhỏ. Trong lúc chờ đợi bạn rửa sạch dưa leo, khế chua, xà lách, húng quế. Dưa leo và khế chua cắt miếng, để riêng.
Thịt chín vớt ra, thái lát. Ăn kèm rau sống đã chuẩn bị ở trên. Nước hầm thịt nấu đến khi sệt dùng làm nước chấm.
